An incredible look at the painstaking dedication one man put into his craft and the impact it had on his sons. Fascinating to anyone who loves sushi but also to those who enjoy human interest stories. From a food perspective, I was interested in Jiro's take on how some fish needs to "age". I think many of us have the perspective that sushi needs to be as fresh as possible. Jiro contends that some fish needs time to come to full potential.
