Hopefully soon we can look back and remember how well we all handled COVID19 and all of the restrictions imposed.  Right now we are trying to live day by day.  On Facebook yesterday, we created a poll to let our followers decide which recipe would be posted to our blog.  The results are in and Savory Baked Crepes are the winner.  A couple of good things to note.  Crepes can be made with ingredients on hand and are so versatile!  Want to make them sweet, added mascerated berries and whipped cream or how about topping with peanut butter and nutella.  Get creative and Bon Appetit!

Savory Baked Crepes with Roasted Vegetables and Cheese

Crepes

1 cup all purpose flour

2/3 cup milk

2/3 cup water

3 eggs

Pinch of salt

Filling

2 zucchini diced

1 pepper diced

1 onion chopped

½ cup diced tomatoes

1 tb oil

Salt and pepper

½ tsp chopped herbs

½ cup grated cheese—Gouda, cheddar, Edam

  • Crepes—mix flour, milk and water until smooth, add eggs and mix let rest at room temperature 20 minutes
  • Using a ladle and non stick pan –place some batter in middle of hot pan and swirl batter to edges and cook for 1 minute and flip over  repeat 6 times
  • Placing crepes onto a plate to cool
  • Filling—mix vegetables w/oil, seasoning and herbs-place on baking pan and roast in 350 oven for 20 minutes—remove and cool, add cheese and mix
  • Place some filling on crepe and fold over and place on baking pan
  • Bake in 350 oven for 5-10 minutes
