This engrossing series of hour-long documentaries focuses on a different chef each week. It's an insightful look into their successes and failures while showcasing what makes them tick. Hands-down my favorite episode features Argentinian Chef Francis Mallmann. I first came across Mallmann when I read his book "Seven Fires" and have been enamored with his approach to cooking ever since. While his experiences are varied he now chooses to use fire as the chief medium to express himself in food. One of my concepts in grilling is the "taste of burnt". It is Mallmann's way of describing how a bit char in context to an otherwise perfectly grilled piece of meat can result in sublime flavor. The rugged backdrop of Patagonia, where he currently resides, perfectly suits his current approach to cooking.
